Pungent Ginger Tea

Ginger as an ingredient is beneficial in combating nausea, dizziness, chronic pain, inflammation and helps in improving digestive processes. I brewed a cup of ginger tea when I had a mildly upset stomach and the tea had a soothing effect on my senses. The ginger does give the tea that extra bite and some people would call this "bitterness." However, in my opinion, the people who love the taste of ginger will really relish this tea and the recipe.

* 4 cups water
* 2 cinnamon sticks
* 1/2 cup fresh ginger, chopped
* 1 tablespoon lemon zest
* Lemon juice freshly squeezed (from 1 lemon)
* 1/3 cup honey
* Fresh mint

1. Bring water and cinnamon to a boil.
2. Add ginger to the pot along with lemon zest and lemon juice.
3. Cover and simmer for 30 minutes.
4. Add honey, stir well, and simmer (covered) for another 20 minutes.
5. Pour over fresh mint, then strain and serve. The tea can be cooled and refrigerated for no more than 1 week.
